Ingredients

  • 1 tablespoon olive oil
  • 1 ½ pounds boneless skinless chicken, cut into 1-inch pieces
  • 2 cloves garlic minced
  • 4 cups reduced-sodium chicken broth divided
  • 16 ounces uncooked penne pasta
  • 1 tablespoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 cup Parmesan cheese grated
  • 1/2 cup heavy cream
  • 1 cup sun-dried tomatoes drained and roughly chopped
  • 1 cup fresh spinach
  • Optional garnish: Fresh basil

Instructions

  • Sauté the Chicken: Press the Sauté function on the Instant Pot. Once hot, add the olive oil, then stir in the chicken. Cook for 2-3 minutes until lightly browned.
  • Add Garlic: Stir in the minced garlic and cook for 30 seconds, stirring constantly.
  • Deglaze the Pot: Pour in ½ cup of the chicken broth and use a spatula to scrape up any browned bits from the bottom of the pot.
  • Add Remaining Ingredients: Pour in the remaining chicken broth, then layer the pasta on top. Sprinkle with Italian seasoning, paprika, and black pepper. Do not stir.
  • Pressure Cook: Secure the lid and set the pressure valve to Sealing. Cook on High Pressure for 4 minutes.
  • Quick Release: When cooking is done, carefully turn the valve to Venting for a quick release.
  • Finish the Sauce: Open the lid and stir well. Add the Parmesan cheese and mix until melted. Stir in the heavy cream.
  • Final Touches: Add the sun-dried tomatoes and spinach, stirring until combined and wilted.
  • Serve: Garnish with fresh basil if desired and serve warm.

Broth Options: Reduced-sodium broth helps control salt levels. You can use regular or no-salt-added broth based on preference.
