Ingredients

Meatballs

  • 1 pound ground beef
  • 1 pound ground pork
  • 1 large egg
  • 1 cup ricotta cheese
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Coating

  • 1 cup pork rind crumbs

Sauce

  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons minced garlic
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon paprika
  • Optional: Fresh basil for garnish

Instructions

  • Preheat the Oven: Set the oven to 400°F (200°C) and grease a 10×13-inch baking dish with butter.
  • Make the Meatballs: In a large bowl, mix the ground beef, ground pork, egg, ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper until well combined. Shape into small, evenly sized meatballs.
  • Coat the Meatballs: Roll each meatball in pork rind crumbs for a crispy exterior. Arrange them in the prepared baking dish.
  • Bake: Bake for 20 minutes or until golden brown. Remove from the oven and set aside.
  • Prepare the Sauce: In a skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant.
  • Simmer the Sauce: Pour in the heavy cream, season with salt, pepper, and paprika (if using), and let it simmer until thickened. Stir in the grated Parmesan cheese.
  • Combine: Add the baked meatballs to the skillet, coating them in the sauce.
  • Serve: Garnish with fresh basil if desired and enjoy!
